This barrel aged saison spent almost 2 years in the Bozeman Underground in a combination of French and American oak barrels. During a long and slow secondary fermentation with multiple Brettanomyces strains, the beer developed the perfect character. Grapefruit was added late in the fermentation to add a slight citrus note. Oaky, earthy, fruity, and spicy flavors make this a complex and refreshing experience.
