After 12 months aging in our barrel cellar, we’re excited to release the spawn of Funky Virtue, the Son of Funky. This Brett focused blend of 3 barrels came about when we emptied our Funky Virtue barrels over a year ago. We left a few gallons of beer and spent cherries in the bottom of the barrels, at which time we refilled them with a fermented/finished wheat beer that had a light dose of hops.   A large population of Brettanomyces in the barrel was left to perform a secondary fermentation and evoke the definitive character of Brett as it slowly consumed the remaining sugars. Aromas of peach, apricot, and pineapple blend with a touch of classic earthy Brett funk in the nose, which also carries through in the flavor. Crisp, dry, refreshing, and full of fruity esters the simple wheat base of the beer lets the complex nature of Brettanomyces shine. Cheers!
